When I hold my OnePlus 6 and Huawei P20 Pro in hand, I can record good quality videos when I am riding or walking. The OIS of Huawei P20 Pro is awesome and OnePlus 6 has even better OIS.
2. How is the color sensor of OnePlus 6 and Huawei P20 Pro Cameras?
In daytime, Huawei P20 Pro front camera and rear cameras take brighter and richer color than the real scenery. OnePlus 6 behave better in capturing real colors. It creates more real colors and smooth transition.
OnePlus 6 performs better in low light circumstance, producing bright, clear shots with minimal image noise. Huawei P20 Pro takes good photos but still have much noise and reddish colors.

P20 is better
Gutted one plus 6 at times even beats the p20 Pro due to lazy software implementation and costing almost twice as much. Huwai should be wiping the floor with the one plus 6 enlist based on hardware implementation. But due to the lack of a decent software implementation it just not behave like a flagship phone.
Medicro screen, no wireless charging trashy software icons.
I will be swapping to one plus 6.
